Abstract
      On the basis of the mechanism of protein enzymatic hydrolysis, the hydrolysates
were combined into several lumps according to their molecular mass. The reaction of
lumps was described with a simplified kinetic equation. Then the kinetic model for bovine serum albumin tryptic hydrolysis reaction was established. The rate constant of each reaction was estimated by a nonlinear regression rule in two steps. The ability of prediction and extrapolation of the simplified kinetic model and the good quality of the obtained rate coefficients was tested by comparing the computed values with the experimental values.
